PANNERONE

Pannerone (or Panerone) is a fresh cheese or a shortened-aging cheese, recognisable from the typical drop shape in the holes. Pannerone has a particular flavour: sweet at the beginning and bitter at the end. This difference is caused by the peculiar lack of salt in the paste. Pannerone gets its name from the local dialect word “pànera” which means cream.
