MARUBINI OF CREMONA

Marubini are a traditional type of stuffed pasta made with bread flour, soft wheat flour and eggs and filled with meat, Grana Padano DOP and nutmeg. Depending on the area, the meat used in the filling can change: beef marinated with vegetables or red wine, roasted veal with butter, sage and rosemary, pork (sometimes “pistum” can be used, “pistum” is a Cremonese salami dough) and a little wine. Marubini can be served dry or cooked in the traditional “three broths” prepared with chicken, beef, pork or salame da pentola (ready-to-boil salami) and vegetables to season the broth. Nowadays, Marubini represent an important traditional dish and for this reason it’s prepared during festivities, combined with rosé or red wines.
